Ingredients
- 100 grams cottage cheese
- 8-10 button mushrooms
- 2 bunches spinach
- 1 tablespoon oil
- 2-3 tablespoons gram flour (besan)
- 4 tablespoons thick yogurt
- 1/4 teaspoon turmeric powder
- Salt to taste
- 1 teaspoon cumin seeds
- 3-4 green chillies
- 1 teaspoon garam masala powder
- Red capsicum curls for garnishing
Method
- Boil sufficient water in a deep non-stick pan, add spinach and blanch for 2 minutes. Drain, refresh in cold water and blend to a puree with ½ cup water.
- Heat oil in another non-stick pan.
- Put gram flour, yogurt, turmeric powder and salt in a bowl and mix. Add ½ cup water and whisk till smooth.
- Add cumin seeds to the 2nd pan and sauté till they change colour.
- Slit green chillies without cutting through and add to the pan. Add gram flour mixture and mix well.
- Quarter button mushrooms and add to the pan and mix well. Cook for 5-7 minutes, stirring continuously.
- Cut cottage cheese in small cubes and add to the pan.
- Add spinach puree and mix well. Add garam masala powder and mix well. Adjust salt and mix again. Cook till the mixture thickens.
- Transfer the mixture into a serving bowl, garnish with red capsicum curls and serve immediately.
