Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paneer Mushroom Recipe

  • Cottage Cheese 150 grams

  • Mushrooms quartered 200 grams

  • Oil 2 tablespoons

  • Onions 3 medium

  • Tomato 1 medium

  • Salt to taste

  • Green capsicum 1 medium

  • Pineapple slices tinned 3

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1 teaspoon

  • Coriander powder 1 teaspoon

  • Ginger paste 1 teaspoon

  • Garlic paste 1 teaspoon

  • Tomato puree 2 tablespoons

  • Garam masala powder 1/2 teaspoon

Method

Step 1

Heat oil in a non stick pan. Thickly slice onions. Roughly chop tomato.

Step 2

Add onions to the pan and saute for 1 minute. Add mushrooms and salt, toss and cook.

Step 3

Cut capsicum to small pieces. Cut cottage cheese into small cubes. Cut pineapple into small cubes.

Step 4

Add turmeric powder, red chilli powder and coriander powder to the pan and mix. Add ginger paste and garlic paste and saute till fragrant.

Step 5

Add capsicum, tomato and pineapple and mix well. Add tomato puree and mix and cook for 2 minutes.

Step 6

Add cottage cheese, mix and cook till the cottage cheese pieces get heated through. Add garam masala powder and mix. Adjust salt. Serve hot.
