Paneer Kathi Roll

Ingredients 

  • 400 grams cottage cheese (paneer), cut into strips
  • 4 whole wheat rotis
  • 20-24 onion rings
  • 1 green chilli chopped
  • 1 tablespoon vinegar
  • 2 tablespoons oil
  • 1 medium onion, sliced
  • 1 medium tomato, unseeded and sliced
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chilli powder
  • ½  teaspoon turmeric powder
  • ½  teaspoon garam masala powder
  • 2 tablespoons thick yogurt
  • Mayonnaise as required
  • Green chutney as required
  • Chaat masala to sprinkle

Method

  1. Take onion rings in a bowl, add green chillies and vinegar and set aside.
  2. Heat oil in a non-stick pan, add sliced onions and sauté till golden brown. Add tomatoes and cook till the tomatoes are soft.
  3. Add ginger-garlic paste, red chilli powder, turmeric powder and cottage cheese strips and sauté. Add garam masala powder and yogurt. Mix well and cook for 2-3 minutes.
  4. Place each roti on the worktop, spread some mayonnaise and green chutney over it.
  5. Keep a portion of the cottage cheese mixture in the centre and top up with some onion-chilli mixture. Sprinkle chaat masala and roll tightly.
  6. Cut each roll into 2 equal pieces, wrap in colourful tissue napkin and arrange on a serving platter. Serve immediately.
