Ingredients
- 16 thick cottage cheese (paneer) strips
- 4 refined flour rotis
Spice mix - 2 teaspoons red chilli powder
- Black salt to taste
- 1 teaspoon coriander powder
- 2 teaspoons chaat masala
- Salt to taste
Stuffing - 2 tablespoons oil
- 2 medium onions, finely chopped
- 2 teaspoons ginger-garlic paste
- 2 medium tomatoes, finely chopped
- 1-2 teaspoons red chilli powder
- 1 teaspoon coriander powder
- 2 teaspoons cumin powder
- ½ teaspoon turmeric powder
- Salt to taste
Topping - Chilli vinegar as required
- Onion strips as required
- Chopped fresh coriander leaves as required
Method
- To make the spice mix, combine red chilli powder, black salt, coriander powder, and chaat masala in a bowl. Set aside.
- To make the stuffing, heat oil in a non-stick pan. Add onion and sauté till translucent. Add ginger-garlic paste, mix and cook for 1 minute.
- Add tomato, mix and cook for 2-3 minutes.
- Add red chilli powder, coriander powder, cumin powder, turmeric powder, and salt and mix well. Add ¼ cup water and mix. Cook for 1-2 minutes.
- Add cottage cheese strips and toss well. Add 2-3 tablespoons water, mix and cook for 1 minute.
- Heat a non-stick tawa. Place the roti on it and cook for a few seconds on each side. Place the roti on a worktop, add a portion of the cottage cheese mixture in the centre, drizzle chilli vinegar, arrange onion strips, and sprinkle coriander leaves. Tightly roll it into a Frankie.
- Cover the Frankie with a parchment paper, and serve.
