Paneer Bhurji Sandwich

Ingredients

  • 250 grams cottage cheese (paneer), grated
  • 8 bread slices
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 green chillies, finely chopped
  • 1 medium onion finely chopped
  • ¼ teaspoon turmeric powder
  • 3 tablespoons fresh coriander chopped
  • Salt to taste
  • Butter as required
  • Green chutney as required

Method

  1. Heat oil in a nonstick pan, add cumin seeds and once it changes colour add green chillies and sauté for a minute.
  2. Add onion and cook till golden brown in colour. Add turmeric and sauté for 2 seconds.
    Add cottage cheese, coriander and salt, cook for 3-4 minutes. Set aside.
  3. Place the bread slices on a board and apply butter on one bread slice. Then apply chutney, spread the paneer mixture on top. Cover with the other bread slice and apply butter on top.
  4. Grill till crisp, cut into triangles and serve hot with green chutney.
