Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Palak, Paneer, Corn Sabzi Recipe

  • Palak chopped 2

  • Cottage Cheese 150 grams

  • Corn kernels boiled 1 cup

  • Onions 2 medium

  • Oil 2 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Garlic cloves chopped 7-8

  • Coarse gram flour (besan) 2 tablespoons

  • Green chillies slit 2

  • Salt to taste

  • Yogurt 1/4 cup

  • Garam masala powder 1/4 teaspoon

  • Red capsicum a few thin strips

  • Yellow capsicum a few thin strips

  • Fresh coriander leaves a sprig

Method

Step 1

Chop onions in a chopper. Heat oil in a non-stick pan, add cumin seeds and garlic and saute. Add onions and mix and sauté for 2-3 minutes.

Step 2

Chop spinach in the chopper. When onions turn golden, add gram flour and continue to sauté.

Step 3

Add spinach and ½ cup water and mix well. Add corn kernels and mix.

Step 4

Cut cottage cheese into small cubes and add to the pan. Add green chillies and salt and mix.

Step 5

Add yogurt and mix well. Add garam masala powder and mix.

Step 6

Transfer into a serving dish, garnish with red and yellow capsicum strips and coriander leaves and serve hot.
