Ingredients for PUMPKIN MUFFINS - skk Recipe

  • Pumpkin puree 1 1/2 cups

  • Refined flour 2 cups

  • Coffee liqueur 2 tablespoons

  • Butter 1 cup

  • Powdered sugar 1 cup

  • Eggs 2

  • Baking soda 1 teaspoon

  • Baking powder 1 teaspoon

  • Salt 1/4 teaspoon

  • Cinnamon powder 1/2 teaspoon

  • Nutmeg (jaiphal) powder 1/4 teaspoon

  • Ginger grated 1/2 teaspoon

  • Milk 2 tablespoons

  • Icing sugar for dusting

Method

Step 1

Preheat oven to 180°C.

Step 2

Pour coffee liqueur into a bowl, add butter and powdered sugar and beat with an electric beater till light. Add eggs and beat well. Add pumpkin puree and beat again.

Step 3

Add flour, baking soda, baking powder, salt, cinnamon powder, nutmeg powder and ginger and beat till you get a lump free batter. Add milk and mix well. Transfer the batter in a piping bag fitted with a nozzle.

Step 4

Pipe the batter into cupcake moulds till ¾ full. Place the in the preheated oven and bake for 15-20 minutes. Remove from oven, cool and demould.

Step 5

Place them on a serving platter, dust icing sugar on top and serve.
