Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for PANEER BHURJI SANDWICH - skk Recipe

  • Cottage cheese (paneer) grated 250 grams

  • White bread slices 8

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Green chillies finely chopped 2-3

  • Large onion finely chopped 1

  • Turmeric powder 1/4 teaspoon

  • Fresh coriander leaves chopped 4 tablespoons

  • Salt to taste

  • Butter as required

  • Green chutney to serve

Method

Step 1

Heat oil in a non-stick pan, add cumin seeds and saute till their colour changes. Add green chillies and onion, mix and sauté for 1 minute.

Step 2

Add turmeric powder, mix and saute for 1 minute.

Step 3

Add cottage cheese, coriander leaves and salt, mix well and cook for 3-4 minutes. Take the pan off the heat and let the mixture cool.

Step 4

Place 4 bread slices on the worktop and apply butter and green chutney on one side of these slices. Spread cottage cheese mixture generously and cover each with the remaining bread slices. Apply butter on the top of each sandwich.

Step 5

Keep the sandwiches, 2 at a time, in a heated griller, close and grill marks appear on both sides and become crisp.

Step 6

Cut each sandwich into 2 triangles, place them on serving plates and serve immediately with green chutney.
