Ingredients list for Orange and Olive Oil Cake
- 3 Oranges
- 1/4 cup Orange juice
- 2/3 cup Extra virgin olive oil
- Refined flour (maida) 2 cups + for dusting
- for greasing Butter
- 1/2 cup Buttermilk
- 2 teaspoons Lemon juice
- 1 cup Sugar
- 3 Eggs
- a pinch Salt
- 1/4 teaspoon Baking soda
- 1 1/2 teaspoon Baking powder
Method
- Heat buttermilk in a non-stick pan till just warm. Add lemon juice and set aside for ten minutes. Stir well.
- Preheat oven to 180°C. Grease an 8 inch round cake tin with some butter and dust with some flour.
- Grate the peel of the oranges into a bowl. Add sugar and mix well. Add the orange juice, buttermilk, eggs and olive oil and beat well.
- Add the flour, salt, baking soda and baking powder and beat till a smooth batter is formed.
- Pour the batter into the prepared tin, place the tin in the preheated oven and bake for forty-five to fifty minutes. Remove from oven and cool.
- Remove from the tin, cut into wedges and serve.
