History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Onion Chutney Recipe

  • Onion chopped 2 Big

  • Tamarind

  • Mustard seeds 1/2 teaspoon

  • Curry leaves 10

  • Black gram split (urad dal dhuli) 1 teaspoon

  • Dried red chillies 2

  • Green chilli 2

  • Salt to taste

  • Oil 2 tablespoons

Method

Step 1

Heat oil in non stick pan, add the mustard seeds, curry leaves, uradd dal, red chillies and green chillies.

Step 2

Saute till golden. Remove from heat and allow the mixture to cool.

Step 3

In a blender add the onions and blend with the above mixture to a smooth paste.

Step 4

Remove in a bowl add salt and tamarind water. Mix well and serve.
