Ingredients
- 8 eggs
- 1 medium onion, finely chopped
- 3 tablespoons coriander leaves, chopped
- 4-5 green chillies, chopped
- 2-4 tablespoons milk
- ½ teaspoon turmeric powder
- Salt to taste
- 2 teaspoons oil
- Tomato ketchup to serve
Method
- Break 4 eggs into a large bowl and whisk well. Strain the mixture into another bowl. Add ½ the chopped onion, 1½ tbsps. coriander leaves, half the green chillies, 1-2 tbsps milk, ¼ tsp turmeric powder and salt, and whisk well.
- Heat 1 tsp oil in a shallow non-stick pan and spread it with tissue paper.
- Pour a quarter portion of the egg mixture into the pan let it spread all over the pan and cook on low heat for 1 minute. Gently roll from one end to the other to form a log.
- Shift the log on one end of the pan pour another quarter portion of the egg mixture and let it spread. Let it cook for 1 minute and start rolling. Repeat till all the mixture is over. Gently take it off the heat. Cook the remaining ingredients similarly.
- Cut the rolls into slices, arrange them on a serving plate and serve hot with tomato ketchup.
