Slice garlic. Heat plenty of water in a deep non stick pan. When the water begins to boil, add macaroni and salt and let it cook. Heat olive oil in a non stick pan. Add garlic and sauté for a minute. Add cherry tomatoes and salt and let it cook till soft. Add hummus and ½ cup water and stir to mix well. Drain macaroni and add to the tomatoes mixture. Add chickpeas, red and green capsicums, crushed red chillies, salt and mix well. Add coriander leaves and mix. Serve hot drizzled with extra virgin olive oil.
