Macaroni With Chickpeas

Ingredients 

  • 300 grams macaroni
  • 3 tablespoons chickpeas (kabuli chana),cooked
  • 4 tablespoons hummus
  • 1/4 medium red capsicum
  • 1/4 teaspoon green capsicum
  • 4-5 cloves garlic
  • Salt to taste
  • 1 teaspoon olive oil
  • 15-20 cherry tomatoes, halved
  • 1/2 teaspoon crushed red chillies 
  • 2 tablespoons chopped fresh coriander leaves
  • 1 tablespoon extra virgin olive oil

Method

  1. Cut red and green capsicums into small cubes. Slice garlic. Heat plenty of water in a deep non stick pan. When the water begins to boil, add macaroni and salt and let it cook. Heat olive oil in a non stick pan.
  2. Add garlic and sauté for a minute. Add cherry tomatoes and salt and let it cook till soft. Add hummus and ½ cup water and stir to mix well. Drain macaroni and add to the tomatoes mixture.
  3. Add chickpeas, red and green capsicums, crushed red chillies, salt and mix well. Add coriander leaves and mix. Serve hot drizzled with extra virgin olive oil.
