Ingredients for Macaroni With Chickpeas Recipe

  • Macaroni 300 grams

  • Chickpeas (kabuli chana) cooked 3 tablespoons

  • Hummus 4 tablespoons

  • Red capsicum 1/4 medium

  • Green capsicum 1/4 teaspoon

  • Garlic 4-5 cloves

  • Salt to taste

  • Olive oil 1 teaspoon

  • Cherry tomatoes halved 15-20

  • Red chillies crushed 1/2 teaspoon

  • Fresh coriander leaves 2 tablespoons

  • Extra virgin olive oil 1 tablespoon

Method

Step 1

Cut red and green capsicums into small cubes. Slice garlic. Heat plenty of water in a deep non stick pan. When the water begins to boil, add macaroni and salt and let it cook. Heat olive oil in a non stick pan.

Step 2

Add garlic and sauté for a minute. Add cherry tomatoes and salt and let it cook till soft. Add hummus and ½ cup water and stir to mix well. Drain macaroni and add to the tomatoes mixture.

Step 3

Add chickpeas, red and green capsicums, crushed red chillies, salt and mix well. Add coriander leaves and mix. Serve hot drizzled with extra virgin olive oil.
