Ingredients list for Lime Noodles with Basil
- 1 tablespoon Lemon juice
- 1 cup Noodles flat, boiled
- Fresh basil leaves 6-8 + for garnishing
- 2 Spring onions with greens
- 1 tablespoon Butter
- 1 medium Carrot grated
- 1 medium Red bell pepper cut into medium size strips
- 1 medium Yellow bell pepper cut into medium size strips
- 5-6 Broccoli florets, blanched
- to taste Salt
- 1 teaspoon Castor sugar (caster sugar)
- Sesame seeds (til) toasted, 2 teaspoons + sprinkling
Method
- Slice spring onion bulbs.
- Heat butter in a non-stick pan. Add chopped spring onion bulbs and sauté for a minute. Add carrot and mix well. Add bell peppers and toss to mix.
- Add noodles and toss to mix. Add broccoli and torn basil leaves and mix well.
- Add salt, castor sugar, sesame seeds and lemon juice and mix well.
- Chop spring onion greens, add to the pan and toss to mix.
- Sprinkle some sesame seeds and serve hot garnished with a basil leaf.
