Ingredients list for Lilva Rice
- 1 1/2 cups Rice soaked for 30 minutes and drained
- 100 grams Surti papdi
- 3 tablespoons Ghee
- 4 Cloves
- 1/2 inch Cinnamon
- 1 inch Ginger chopped
- 2-3 Green chillies chopped
- 3 tablespoons Green chutney
- to taste Salt
- 2 teaspoons Lemon juice
- to garnish Fresh coriander sprigs
Method
- Heat ghee in a non-stick deep bottom pan, add cloves, cinnamon stick, ginger and green chillies, mix and sauté till fragrant.
- Add surti papdi, mix and sauté for 2 minutes. Add rice and mix well. Add green chutney and mix well. Add 2½ cups water and mix well. Add salt and mix well. Cover and cook till rice is done.
- Switch the heat off, add lemon juice and mix well.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot.
