Ingredients list for Lemon and Pumpkin Rice
- 1 1/2 cups Lemon Juice soaked for an hour
- 2 teaspoons Basmati Rice
- 1 Lemon
- 250 grams Red pumpkin peeled
- to taste Salt
- 2 tablespoons Ghee
- 1 medium Onion
- 1 teaspoon Cumin seeds
- 1 teaspoon Mustard seeds
- 2-3 Green chillies
- 1 cup Coconut milk
Method
- Heat ghee in a non-stick pan. Slice onion.
- Add cumin seeds and mustard seeds to the pan and let them splutter. Add onion and sauté till translucent.
- Cut pumpkin into 1 inch cubes and add to the pan. Add salt and mix well. Cover and cook for 4-5 minutes.
- Slit green chillies without cutting through and add to the pan. Cover and cook on high heat till the pumpkin changes colour. Add coconut milk and 2 cups water and mix well.
- Add drained basmati rice and bring it to a boil. Cut the lemon half into 4 pieces and add to the pan. Add lemon juice and mix well. Cover and cook till the rice is done.
- Transfer onto a serving plate and serve hot.
