Ingredients list for Leftover Roti Upma

  • 4-5 Leftover Rotis
  • 1 medium Onion
  • 1 teaspoon Oil
  • 1 teaspoon Mustard seeds
  • 12-14 Curry leaves
  • 2 Green chillies chopped
  • 1/4 cup Green peas boiled
  • to taste Salt
  • 3 teaspoons Roasted peanuts crushed
  • Juice of ½ lemon

Method

  1. Roughly chop onion.
  2. Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add chopped onion and saute till onion turns soft.
  3. Tear leftover rotis and place in a crusher. Crush finely.
  4. Add curry leaves and green chillies to the pan and mix. Add green peas and mix well.
  5. Add crushed rotis and toss to mix. Add salt, little water and mix well. Add peanuts, toss to mix and cook for a minute.
  6. Add lemon juice and toss. Let it get heated through.
  7. Serve hot.
