Ingredients list for Kurkuri Arbi

  • 500 grams Colocassia (arbi) boiled and peeled
  • 1 tablespoon Oil
  • 2 teaspoons Carom seeds (ajwain)
  • a big a pinch Asafoetida
  • to taste Salt
  • 1 teaspoon Red chilli powder
  • 1 tablespoon Fresh coriander leaves chopped
  • 1 teaspoon Lemon juice
  • 1 teaspoon Chaat masala

Method

  1. Halve the colocassia vertically and flatten each piece between your palms.
  2. Heat sufficient oil in a kadai and deep-fry the colocassia till golden brown.
  3. Drain on absorbent paper.
  4. Heat one tablespoon oil in a non-stick pan.
  5. Add carom seeds, asafoetida, salt and red chilli powder and stir.
  6. Add the fried colocassia slices and mix well.
  7. Cover and cook on low heat for five minutes.
  8. Add coriander leaves, lemon juice and chaat masala. Mix well. Serve hot.
