Ingredients list for Italian Rice

  • cups Cooked rice
  • 2 stalks Celery sliced
  • 2 medium Carrot julienne
  • 1 Green capsicum cut into thin strips
  • 1 Red capsicum cut into thin strips
  • 1 medium Onion thickly sliced
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Oil
  • 1 tablespoon Vinegar
  • 1 tablespoon Mixed herbs dry
  • to taste Salt
  • to taste Black pepper powder
  • 1/2 cup Mozzarella cheese


  1. In a bowl mix together celery, carrots, green and red capsicum, and onion.
    Mix well.
  2. Make a seasoning with mayonnaise, oil, vinegar, mixed herbs, salt and pepper powder. Whisk well.
  3. In a fresh bowl add the rice, mixed vegetables, mayonnaise dressing and grated cheese. Toss all well and serve with hot soup.
