Ingredients
- 2 green unripe bananas
- Salt to taste
- 1 medium cucumber,chopped
- 2 stalks celery , thinly sliced
- 1 medium carrot , coarsley grated
- A small bunch of lettuce leaves
For dressing
- 3 tablespoons olive oil
- 1 tablespoon vinegar
- Salt to taste
- 1/4 teaspoon black pepper powder
- 1 garlic clove, crushed
- 2 teaspoons mustard paste
Method
- Peel the bananas and cook in boiling salted water for ten minutes, or until just tender. Drain, cool and cut crosswise into half-inch slices.
- Place all the ingredients for the dressing in a small glass jar and shake well to mix.
- Mix together the banana, cucumber, celery and carrot in a large bowl. Add the dressing and toss well to mix. Serve on a bed of lettuce.
