Ingredients list for Fried Prawns in Mushroom Ginger Sauce
- 8-10 Medium Prawns shelled and deveined
- 1 cup Mushrooms thinly sliced
- 2 tablespoons Ginger strips
- for deep-frying Oil 1 tablespoon +
- Cornflour 4 tablespoons + for coating
- 1 tablespoon Garlic finely chopped
- 1 medium Onion sliced
- to taste Salt
- 1 teaspoon Crushed black peppercorns
- 1 cup Green capsicum juliennes
- 1 teaspoon Sugar
- 1 tablespoon Vinegar
- 2 tablespoons Dark soy sauce
- 1 1/2 cups Vegetable stock
- 2 tablespoons Chopped fresh coriander leaves
Method
- Heat sufficient oil in a kadai.
- Take cornflour on a plate, coat the prawns in it and deep-fry in hot oil. Drain on absorbent paper.
- Heat one tablespoon oil in a non-stick pan, add garlic, ginger and onions and sauté till the onions turn brown.
- Add capsicum, salt, crushed peppercorns, sugar, vinegar and soy sauce and mix well. Add one cup vegetable stock and stir well.
- Add mushrooms and cook for a minute or till the mushrooms turn soft.
- Take 4 tablespoons cornflour in a bowl, add remaining vegetable stock and mix well to make a smooth slurry. Add the slurry to the mushroom mixture and mix well.
- Add fried prawns to the mushroom sauce and toss lightly.
- Serve hot garnished with coriander leaves.
