Ingredients list for Fresh Herbs and Spicy Bread Loaf
- 1/4 cup Fresh coriander leaves roughly chopped
- 1/4 cup Fresh mint leaves roughly chopped
- 4-5 Green chillies
- 4 cups + 4 Refined flour (maida)
- for greasing Oil
- 2 teaspoons Fresh yeast
- 2 teaspoons Castor sugar (caster sugar)
- 2 teaspoons Salt
- 1/2 inch Ginger
- 1 teaspoon Garlic chopped
- 2 teaspoon Butter
Method
- Put yeast and castor sugar in a bowl, add two tablespoons warm water and set aside for two minutes for the yeast to activate.
- Put flour and salt in another bowl. Add yeast mixture and mix well.
- Grind together coriander leaves, mint leaves, green chillies, ginger and garlic, with sufficient water, to a smooth paste.
- Add this paste to the flour mixture and knead into a soft dough. Add butter and knead again. Cover with a damp muslin cloth and set aside to prove for twenty minutes.
- Knock back the dough, place in the greased tin, cover with a damp muslin cloth and set aside for twenty minutes.
- Preheat oven to 200º C. Grease a loaf tin with some oil.
- Remove the muslin cloth, put the tin in the preheated oven and bake for fifteen to twenty minutes.
- Remove from the oven and brush some butter on top. Let it cool.
- Remove from the loaf tin, slice and serve.
