You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Desi Anda Fry Recipe

  • Eggs hard boiled and peeled 4

  • Oil 1 tablespoon

  • Butter 1 tablespo as required

  • Green chillies finely chopped 1-2

  • Ginger-garlic paste 1 tablespoon

  • Medium onion finely chopped 1

  • Medium tomato finely chopped 1

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1 tablespoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Pavs to serve


Step 1

Heat oil and butter in a non-stick pan. Add green chillies and ginger-garlic paste, mix well and sauté till fragrant.

Step 2

Add onion, tomato and salt, mix well and cook till tomatoes turn soft and pulpy.

Step 3

Add chilli powder and garam masala powder and mix. Cut the eggs into wedges and add along with coriander leaves and some water, mix well and cook till moisture dries. Remove from heat and set aside.

Step 4

Heat some butter in the same pan. Place halved pavs on it and toast lightly on both sides.

Step 5

Serve immediately with hot anda fry.
