Ingredients
- 1½ cups hung yogurt
- 8 white bread slices
- 1 medium onion chopped
- 1 medium tomato chopped
- ½ cup corn kernels boiled
- 3 tablespoons mixed coloured capsicums chopped
- Salt to taste
- Crushed black peppercorns to taste
- 2 green chillies chopped
- Fresh coriander leaves chopped as required
- Butter to shallow fry + for applying
- Green chutney as required
- Cheese spread for drizzling
- Schezwan sauce for drizzling
- Nylon sev to garnish
Method
- Take hung yogurt in a bowl. Add onion, tomato, corn kernels, mixed capsicums, salt, black pepper powder, green chillies and coriander leaves and mix well.
- Apply butter to 4 bread slices. Apply green chutney on them and spread some yogurt mixture.
- Similarly, apply butter and chutney on the remaining 4 slices and place them over the yogurt mixture, chutney side facing downwards.
- Heat some butter in a non-stick pan, place the sandwiches in it and shallow-fry, turning sides, till golden brown on both sides.
- Cut each sandwich into 2 triangles and place in separate serving plates. Drizzle cheese spread and schezwan chutney on top. Garnish with nylon sev and coriander leaves.
- Serve immediately with wafers.
