Ingredients list for Curried Chicken Satay
- 400 grams Boneless chicken cut into strips
- 1 tablespoon Curry powder
- 2 tablespoons Peanut butter
- 2 tablespoons Coconut cream
- 1-2 Green chillies finely chopped
- 1 teaspoon Dark soy sauce
- 1 tablespoon Lemon juice
- to taste Crushed black peppercorns
- to taste Salt
- 1 tablespoon Fresh coriander leaves chopped
- for greasing Butter
- 3-4 Iceberg lettuce leaves
Method
- Take chicken strips in a bowl. Add peanut butter, coconut cream, green chillies, curry powder, soy sauce, lemon juice, crushed peppercorns, salt and coriander leaves and mix well. Set aside to marinate for 10-15 minutes.
- Preheat an electric grill toaster.
- Skewer each marinated chicken strip on a satay sticks.
- Grease the preheated toaster with some butter, place the prepared satay sticks on the preheated toaster and grill from both sides till chicken is cooked and golden.
- Place few iceberg lettuce leaves on one side of the platter, place satay sticks on other side and serve hot.
