The highly developed and sensitive palates of the Tamilians are well chronicled in the Sangam classics. They believe that food should ideally cater to all the six tastes - bitter, pungent, sweet, salty, sour and astringent.
Tamil Nadu has a wide variety of delicious food both for the vegetarians as well as the non-vegetarians, though most of it is made of grains, lentils, rice and vegetables. Spices are added to give a distinctive taste. Rice has been the staple diet of the Tamilians, an inculcated habit, due to the large-scale cultivation of the crop in the state.
Chettinad cuisine, a speciality in Tamil Nadu, is famous for its hot and spicy non-vegetarian food.   A part of the Mudaliar community is non-vegetarians and its cuisine is delightfully spicy without being too hot. Wet masalas are generally used, the main ingredients being fresh coconut paste and ground ginger-garlic.

Ingredients for Cucumber dosa Recipe

  • Cucumber pureed 1 cup

  • Rice flour 1 cup

  • Asafoetida a pinch

  • Green chillies finely chopped 6

  • Ginger grated 1 inch piece

  • Lemon juice 1 tablespoon

  • Sugar 1 teaspoon

  • Salt to taste

  • Oil as required

Method

Step 1

Mix in cucumber puree and rice flour. Add one and a half cups of water to make a batter of pouring consistency.

Step 2

Let it ferment for four hours.

Step 3

Mix in asafoetida, green chillies, ginger, lemon juice, sugar and salt to taste.

Step 4

Heat an iron tawa till it becomes very hot. Sprinkle some water.

Step 5

When the water starts evaporating, wipe with a soft cloth. Lower heat.

Step 6

Sprinkle a few drops of oil and spread it with a piece of onion or potato.

Step 7

Pour a ladle full of batter and spread it as thinly as possible.

Step 8

A couple of dosas may go wrong but once the tawa gets seasoned the rest of the dosas will come out well.

Step 9

Pour oil around the dosa and let it cook till it becomes crisp at the edges and turns golden brown.

Step 10

Fold and remove. Serve hot with chutney.
