Ingredients list for Crunchy Coconut Chicken
- 250 grams Boneless chicken cut into 1½ inch strips
- ½ cup Scraped coconut
- for deep-frying Oil
- ¾ cup Bread crumbs dried
- 1 teaspoon Red chilli flakes
- 1 inch Ginger finely chopped
- 4-6 Curry leaves finely chopped
- 2-3 tablespoons Fresh coriander leaves
- to taste Crushed black peppercorns
- to taste Salt
- 1 tablespoon Cornflour/ corn starch
- 1 Egg
Method
- Heat sufficient oil in a pan.
- Put breadcrumbs, chili flakes, ginger, curry leaves, coriander leaves, coconut, salt and crushed peppercorns in a bowl and mix well. Add cornflour and mix well. Spread this mixture on a plate.
- Take chicken in a bowl. Add crushed peppercorns, salt and egg and mix well.
- Coat the chicken strips with breadcrumb mixture and place them on a plate.
- Deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
- Serve hot with tomato ketchup.
