Ingredients list for Couscous Makai Pulao
- 1 cup Couscous
- 1 cup American corn kernels
- 1 tablespoon Olive oil
- 2 tablespoons Butter
- 1 inch stick Cinnamon
- 2-3 Cloves
- 2-3 Green cardamoms
- 1 medium Onion sliced
- 1 inches Ginger chopped
- 1/2 teaspoon Garlic chopped
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Red chilli powder
- to taste Salt
- 1 3/4 cups Vegetable stock
- 1 tablespoon Fresh coriander leaves chopped
Method
- Heat olive oil and butter in a non-stick pan, add cinnamon, cloves, green cardamoms and sauté for a minute.
- Add onions and sauté till translucent.
- Add ginger and garlic and sauté it for a minute.
- Add turmeric powder, red chilli powder and salt.
- Mix well and cook for two to three minutes.
- Add corn kernels and mix well and cook for two to three minutes.
- Add couscous and cook for a few minutes.
- Add vegetable stock and coriander leaves and mix well.
- Cover and cook on medium heat till all the water is absorbed.
- Serve hot.
