Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Upma - SK Khazana Recipe

  • Sweet Corn boiled and crushed 1/2 cup

  • Semolina (rawa/suji) roasted 1 1/2 cups

  • Sweet corn boiled 2-3 tablespoons

  • Oil 2 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Split skinless black gram (urad dal) 1/2 teaspoon

  • Asafoetida 1/4 teaspoon

  • green chillies chopped 1-2

  • Ginger chopped 1/2 inch

  • Curry Leaves 8-10

  • Onion chopped 1 medium

  • Salt to taste

  • Sugar 1/2 teaspoon

  • Coriander chopped for garnish

Method

Step 1

Heat oil in a non-stick pan, add mustard seeds, urad dal, asafoetida, green chillies, ginger, curry leaves, and sauté for 30 seconds.

Step 2

Add onion and sauté till translucent. Add crushed corn, boiled corn, and sauté for 1 minute.

Step 3

Add semolina, salt, and sugar and mix well. Add 3½ cups hot water, and mix well. Cover and cook for 7-8 minutes or till semolina is cooked completely.

Step 4

Take the lid off and mix well. Take it off the heat.

Step 5

Garnish with coriander sprig and serve hot.
