Cinnamon Tossed Mushrooms

Button mushrooms cooked with cinnamon and other spices. These sautéed mushrooms are sliced button mushrooms cooked in olive oil, garlic and herbs until caramelized and tender. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 inch cinnamon stick 
  • 30 button mushrooms, sliced thickly
  • 1 1/2 teaspoons coriander seeds
  • 6-8 cloves
  • 3 tablespoons olive oil
  • 6-8 garlic cloves, chopped
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves 
  • 2 teaspoons chopped fresh mint leaves 
  • 1/4 teaspoon black pepper powder

Method

  1. Grind coriander seeds, cinnamon and cloves to a fine powder.
  2. Heat olive oil in a non-stick pan, add garlic, mushrooms, ground spice mix and salt.
  3. Sauté on high heat till the mushrooms are almost cooked.
  4. Add coriander leaves, mint leaves and black pepper powder.
  5. Mix well and cook for one minute. Serve hot.
