Ingredients list for Chutney Cheese Sandwich

  • 8 Pavs
  • 100 grams Red cheddar cheese
  • 100 grams Cheddar cheese
  • 75 grams Emmantal cheese
  • for spreading Mayonnaise
  • to taste Black peppercorns , crushed
  • as required Olive oil
  • as required Butter
  • to serve Potato wedges
  • Chutney
  • 2 Fresh jalapenos
  • 1/4 small bunches Fresh mint leaves
  • 1/4 small bunches Fresh coriander leaves
  • 5-6 Fresh basil leaves
  • 1 tablespoon Lemon juice
  • to taste Salt

Method

  1. To make the chutney, slice jalapenos, roughly chop mint leaves, coriander sprigs and basil sprigs and put all of them into a blender jar. Add lemon juice and salt and blend into a smooth paste. Transfer in a bowl.
  2. To prepare each sandwich, slit a set of 2 pavs horizontally without cutting through and open it out.
  3. Spread some chutney on one side of the pavs, and some mayonnaise on the other side.
  4. Grate some red cheddar cheese, some cheddar cheese and some Emmental cheese on the mayonnaise side of the pavs. Sprinkle some crushed peppercorns on top and cover with the other side of the pavs.
  5. Heat a non-stick grill pan, add some olive oil and butter and spread them all over the pan. Place the sandwiches and grill till the underside turns golden brown and cheese melts. Brush some butter on top, flip and grill the other side too till golden.
  6. Place the sandwiches on individual serving plates and serve hot with potato wedges and remaining chutney.
