Ingredients
- 8 pavs
- 100 grams red cheddar cheese
- 100 grams cheddar cheese
- 75 grams Emmental cheese
- Mayonnaise for spreading
- Crushed black peppercorns to taste
- Butter as required
- Olive oil for brushing
- Potato wedges for serving
Chutney - 2 fresh jalapenos
- ¼ bunch small fresh mint leaves
- ¼ bunch small fresh coriander sprigs
- 5-6 fresh basil sprigs
- 1 tablespoon lemon juice
- Salt to taste
Method
- To prepare chutney, slice jalapenos. Roughly chop mint leaves, coriander sprigs and basil sprigs.
- Blend together sliced jalapenos, chopped leaves, lemon juice and salt into a smooth paste. Transfer in a bowl.
- To prepare one portion, slit the 2 pavs with one side intact and open.
- Spread some chutney on one side of the pavs, reserving remaining for serving and some mayonnaise on the other side.
- Grate some red cheddar cheese, cheddar cheese and Emmental cheese on the mayonnaise side of the pavs. Sprinkle some crushed peppercorns on top and cover with the other side of the pavs.
- Heat a non-stick grill pan and brush some olive oil and butter. Place the sandwiches and grill from sides till golden brown and cheese melts.
- Serve hot with potato wedges and reserved chutney.
