Ingredients list for Chilli Garlic Okra
- 3-4 Green chillies diagonally sliced
- 6-8 cloves Garlic finely chopped
- 500 grams Okra (ladysfingers/bhindi) wiped dry and ends trimmed
- 4 tablespoons Cornflour/ corn starch
- 2 tbsps + to deep fry Oil
- 1 medium Onion sliced
- 1 medium Green capsicum cut into thin strips
- 1 tablespoon Soy sauce
- 1/2 teaspoon MSG
- 1/2 teaspoon White pepper powder
- to taste Salt
- 2 tablespoons Red chilli flakes
Method
- Sprinkle two tablespoons of cornflour on ladyfingers and mix well. Mix the remaining cornflour in one cup of water and set aside.
- Heat sufficient oil in a wok and deep fry ladyfingers until golden brown and crisp. Drain on absorbent paper.
- Heat two tablespoons of oil in a wok, add garlic and stir fry for half a minute. Add onion, green chillies and capsicum and sauté for two to three minutes or until the onion is transluscent.
- Add soy sauce, MSG, white pepper powder, salt and cornflour mixture. Cook for a couple of minutes or until the mixture thickens, stirring continuously.
- Add fried ladyfingers and toss well to mix. Sprinkle red chilli flakes and serve hot.
