Ingredients list for Chicken Wrapped Prawns
- 250 grams Boneless chicken cut into thin strips
- 12-16 Prawns (medium) shelled and deveined with tails intact
- for deep-frying Oil 1 tablespoon +
- 2 teaspoons Cornflour/ corn starch
- to taste Salt
- to taste Crushed black peppercorns
- 1 tablespoon Ginger-garlic paste
- ½ teaspoon Red chilli powder
- 1 Egg
- 1 tablespoon Garlic chopped
- 2 Green chillies chopped
- 1 tablespoon Red chilli sauce
- 1 teaspoon Tomato ketchup
- 1 tablespoon Soy sauce
- 4-5 + for garnishing Fresh basil leaves
Method
- Insert a toothpick through each prawn. Wrap the prawns with the chicken strips. Set aside.
- Heat sufficient oil in a pan.
- Combine cornstarch, salt, crushed peppercorns, ginger-garlic paste, chilli powder and egg in a bowl. Whisk well with a little water to make a smooth batter.
- Dip the chicken wrapped prawns in the batter and deep-fry in hot oil till golden. Drain on absorbent paper.
- Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté till light golden.
- Add green chillies, mix and sauté. Add chilli sauce, tomato ketchup and soy sauce, mix well and cook for 2 minutes.
- Add little water and mix well. Add salt, crushed peppercorns, torn basil leaves and fried wrapped prawns. Mix well and cook for a minute.
- Garnish with basil leaves and serve hot with salad leaves.
