Ingredients list for Chicken With Bamboo Shoots

  • 600 grams Chicken cut into 1 inch cubes
  • 3 Bamboo shoots canned
  • 2 tablespoons Mustard oil
  • 5 Green cardamoms
  • 1 medium Onion finely chopped
  • 1 tablespoon Green chilli paste
  • 1/2 teaspoon Turmeric powder
  • 1/2 Red chilli paste
  • 2 large Tomatoes finely chopped
  • to taste Salt
  • 1 cup Coconut milk

Method

  1. Heat mustard oil in a non stick kadai. Add green cardamoms and sauté for a minute. Add onion and sauté lightly.
  2. Cut the bamboo shoots into cubes. Add green chilli paste, turmeric powder, red chilli paste, tomatoes and chicken to the kadai and sauté for 2 minutes. Add salt and mix.
  3. Add 1½ cups water and bamboo shoots. Cover and cook for 10-15 minutes. Add coconut milk and cook for 4-5 minutes.
  4. Transfer into a serving bowl and serve hot
