Chicken Walnut Pinwheels

Spiced chicken mince and walnut filling rolled in dough, sliced into pinwheels, and baked until golden, crisp, and flavorful. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 100 grams chicken mince
  • 10-12 walnuts chopped
  • 1 tablespoon oil
  • 1 tablespoon garlic, chopped
  • 1-2 green chillies chopped
  • 1 medium onion, finely chopped
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • ½ teaspoon dried mango powder (amchur)
  • Salt to taste
  • 1 tablespoon fresh coriander leaves, chopped
  • Refined flour dough with carom seeds as required

Method

  1. Preheat oven to 180ºC. Grease a baking tray.
  2. Heat oil in a non-stick pan, add garlic, green chillies and onion, mix and sauté till fragrant and translucent.
  3. Add chicken mince, walnuts, turmeric powder, red chilli powder and dried mango powder, mix well and cook for 2-3 minutes.
  4. Add salt and coriander leaves, mix well and cook for 2-3 minutes.
  5. Roll the dough into a not-too-thin rectangle, trim the edges neatly to make them even.
  6. Spread the chicken mixture evenly and dampen the edges. Roll into a cylinder and cut out slices. Place the slices on the greased baking tray.
  7. Keep the tray in the preheated oven and bake for 40-45 minutes. Arrange them on a serving platter and serve.
