Ingredients list for Chicken Fiesta Roll
- 300 grams Boneless chicken boiled and shredded
- 4 Hotdogs buns
- 1 tablespoon Oil
- 1 tablespoon Garlic chopped
- 1 medium Onion finely chopped
- ½ medium Green capsicum finely chopped
- 1 tablespoon Worcestershire sauce
- 3-4 tablespoons Tomato puree
- 1 tablespoon HP sauce
- to taste Crushed black peppercorns
- to taste Salt
- 1 teaspoon Red chilli powder
- 1 teaspoon brown sugar/jaggery
- 1 teaspoon Vinegar
- 6-8 Black olives pitted
- 1 inch Celery finely chopped
- 4-8 Iceberg lettuce leaves
Method
- Heat oil in a non-stick pan. Add garlic and sauté on high heat till golden. Add onion and sauté till golden.
- Add capsicum and sauté for 30 seconds. Add chicken, mix and cook on medium heat for 1 minute.
- Add Worcestershire sauce, tomato puree and HP sauce, mix and cook for 30 seconds.
- Add crushed peppercorns, chilli powder, salt, brown sugar and vinegar, mix and cook for 1 minute.
- Slice black olives, add to pan and mix. Add celery and mix well.
- Slit the buns without cutting through, keep 1-2 lettuce leaves and some chicken mixture.
- Serve hot.
