Ingredients list for Cheesy Chicken with Grilled Peppers and Onion
- 2 Boneless chicken breasts
- 2 teaspoons Parmesan cheese powder
- ¼ cup Processed cheese grated
- 1 cup Capsicum diced
- 1 medium Onion quartered and layers separated
- 1 tablespoon Garlic chopped
- a pinch Red chilli flakes 1 teaspoon +
- 1 teaspoon Dried mixed herbs
- to taste Crushed black peppercorns
- 1 tablespoon Fresh cream
- 1 teaspoon Mayonnaise
- to taste Salt
- 3 tablespoons + for grilling Olive oil
- 1 tablespoon Bread crumbs
- for garnishing Fresh coriander leaves chopped
Method
- Put garlic, Parmesan cheese, processed cheese, 1 teaspoon red chilli flakes, mixed herbs, crushed peppercorns, cream, mayonnaise and salt in a bowl. Add 3 tablespoons olive oil slowly and mix well. Add breadcrumbs and mix again.
- Add chicken breasts and mix well. Set aside to marinate for 20-25 minutes.
- Preheat oven to 180°C.
- Place marinated chicken on a baking tray. Pour leftover marinade on top and place the tray in the preheated oven. Bake for 12-15 minutes.
- Heat some olive oil in a non-stick grill pan. Add onion, capsicums, salt, crushed peppercorns and pinch of red chilli flakes on top and grill till evenly done.
- Place chicken on a serving plate. Place the grilled vegetables along and serve immediately garnished with coriander leaves.
