Ingredients
- 4 tablespoons oil + for greasing
- 1 medium onion, finely chopped
- 1 cup tomato puree
- ½ teaspoon garam masala powder
- ½ teaspoon red chilli powder
- 1 teaspoon coriander powder
- Salt to taste
- 10-12 cashew nuts
- 200 grams cottage cheese, cut into ½ inch cubes
- 1 teaspoon dried fenugreek leaves (kasuri methi) powder
- 1 tablespoon honey
- Refined flour dough for dusting
- Readymade pizza dough as required
- Onions, cut into squares and layers separated as required
- Green capsicum, seeded and cut into squares
- Butter cubes as required
- ½ cup grated mozzarella cheese
- 1 tablespoon chopped fresh coriander leaves
- Melted butter for brushing
- Dried mixed herbs to sprinkle
- Red chilli flakes to sprinkle
Method
- Heat 1 tablespoon oil in a pan. Add onions and sauté till they go translucent.
Add tomato puree, ¼ cup water and mix. - Add garam masala powder, red chilli powder, coriander powder and mix well. Add salt and cashew nuts and mix well.
- Cover and cook for 5-10 minutes.
- Allow to cool and grind the masala into a fine puree.
- Heat remaining oil in a nonstick pan. Add paneer cubes and sauté till golden brown. Transfer into a plat.
- Add ground tomato mixture and ½ cup water to the same pan.
- Add kasuri methi and honey and mix well. Add cottage cheese cubes and mix with light hands.
- Cover with lid and cook on low heat for 4-5 minutes.
- Add fried paneer cubes and mix well. Cover and cook for 4-5 minutes.
- Dust some refined flour on the work surface and place a portion of pizza dough and rollout into a thick disk.
- Grease an oven tray with some oil, dust some refined flour and arrange the rolled disk on top.
- Cover with a moist muslin cloth and set aside for 15-20 minutes.
- Preheat the oven at 180ºC.
- Spread some ground tomato gravy evenly and top up with cottage cheese pieces.
- Arrange onions and capsicums and butter pieces on top. Sprinkle mozzarella cheese and coriander leaves on top.
- Brush the crust with some melted butter and bake in preheated oven for 20-25 minutes.
- Cut into slices, sprinkle dried mixed herbs, red chilli flakes and serve.
