Butter Paneer Pizza

This pizza has a creamy curry as the pizza sauce and is topped with pieces of spiced paneer, a great vegetarian pizza. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Butter Paneer Pizza

  • 200 grams Cottage cheese (paneer) cut into medium cubes
  • as required Pizza dough
  • 3-4 tables to grease Oil
  • 1 Medium onion finely chopped
  • 1 cup Tomato puree
  • 1/2 teaspoon Garam masala powder
  • 1/2 teaspoon Red chilli powder
  • 1 teaspoon Coriander powder
  • to taste Salt
  • 10-12 Cashewnuts
  • 1 teaspoon Dried fenugreek leaves (kasuri methi) powdered
  • 1 tablespoon Honey
  • 3-4 Onion pieces
  • 3-4 Green capsicum pieces
  • a few Butter cubes
  • 1/2 cup Mozzarella cheese grated
  • 1 tablespoon Fresh coriander leaves chopped
  • to sprinkle Mixed dried herbs
  • to sprinkle Red chilli flakes

Method

  1. Heat 1 tablespoon oil in a non-stick pan, add onion and sauté till translucent. Add tomato puree and ¼ cup water and mix well.
  2. Add garam masala powder, red chilli powder and coriander powder and mix well. Add salt and cashewnuts and mix well. Cover and cook for 5-10 minutes. Cool, transfer into a mixer jar and grind into a fine puree.
  3. Heat remaining oil in another non-stick pan, add cottage cheese cubes and sauté till golden brown. Drain on a plate.
  4. Add the ground puree to the oil remaining in the pan. Rinse the mixer jar with some water and add to the pan. Mix and saute.
  5. Add dried fenugreek leaves powder and honey and mix well.
  6. Add fried cottage cheese cubes and mix well. Cover and simmer for 4-5 minutes. Transfer into a bowl and set aside to cool.
  7. Dust the worktop with some refined flour, keep the dough over it and roll out into a pizza base of medium thickness.
  8. Grease a baking tray with some oil and dust some dry flour over it. Place the pizza base in the tray. Cover with a piece of cloth and set aside for 15-20 minutes.
  9. Preheat oven to 180° C.
  10. Remove the cloth, spread some butter paneer gravy and place the paneer cubes on top.
  11. Arrange onions and capsicum pieces on it. Place butter cubes on top. Sprinkle mozzarella cheese and coriander leaves over the butter.
  12. Baste the edges of the pizza base with some melted butter, keep the tray in the preheated oven and bake for 20-25 minutes.
  13. Bring the tray out of the oven, cut the pizza into wedges, arrange them on a serving plate, sprinkle mixed dried herbs and red chilli flakes and serve.
