Ingredients list for Brown Rice Vegetable Pilaf
- 2 cups Brown basmati rice
- 2 tablespoons Rice bran oil
- 1 Bay leaf
- 2-3 Cloves
- 1 teaspoon Cumin seeds
- 1 inch stick Cinnamon
- to taste Salt
- 1/2 cup Green peas shelled
- 2 medium Carrots diced
- 10-12 French beans chopped
- 1/4 medium Cauliflower separated into florets
- 6-7 medium Button mushrooms halved
- 2 Green chillies slit
- 100 grams Tofu cubed
Method
1. Soak brown rice in four to five cups of water for one hour. Drain and set aside.
2. Heat rice bran oil in a deep pan. Add bay leaf, cloves, cumin seeds and cinnamon. Add drained rice and salt and sauté for one to two minutes. Add five cups of water. Bring to a boil. Add , cauliflower, mushrooms, green chillies and tofu.
3. Stir green peas, carrots, French beansand mix. Bring to a boil.
4. Reduce heat to low, cover and cook till done.
5. Serve hot.
