Ingredients list for Bhurji Pav
- 6 Eggs beaten
- 8 Pavs
- 1 teaspoon Oil 2-3 tablespoons +
- 2 medium Onions chopped
- 2 medium Tomatoes chopped
- to taste Salt
- 1 teaspoon Red chilli powder
- ¼ teaspoon Turmeric powder
- 2 Green chillies chopped
- 2 tablespoons Fresh coriander leaves chopped
Method
- Heat oil in a non-stick pan, add onions and sauté till golden.
- Add tomatoes and salt and cook till oil separates.
- Add red chilli powder, turmeric powder and green chillies. Mix well and add whisked eggs. Mix well and cook, stirring continuously, till eggs are fully scrambled.
- Add coriander leaves, mix well and transfer on a serving plate.
- Heat 1 teaspoon oil in the same pan. Slit pavs horizontally in half and fry for ½ minute, pressing down on pavs 2-3 times, till crisp and light brown.
- Serve pavs with bhurji.
