Ingredients list for Bhindi Ka Shorva

  • 500 grams Mutton 1 1/2 inch pieces on the bone
  • 250 grams Lady fingers
  • 1 lemon size ball Tamarind
  • 2-3 cup Oil
  • 3 medium Onions sliced
  • 1/2 teaspoon Ginger paste
  • 1/2 teaspoon Garlic paste
  • to taste Salt
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 2 tablespoons Yogurt
  • 1/2 teaspoon Garam masala powder
  • 1/4 cup Fresh coriander leaves chopped

  1. Trim the ladyfingers. Soak tamarind in about one cup of water for fifteen minutes. Squeeze and strain to get tamarind water. Heat oil in a kadai and sauté ladyfingers lightly. Drain and place on an absorbent paper. In the same oil, sauté the onions till golden brown.
  2. Add ginger paste and garlic paste and sauté for two minutes. Add salt, turmeric powder and red chilli powder and yogurt and stir.
  3. Sprinkle a little water so that the spices do not stick to the pan and cook the masala for another two minutes. Add the mutton and sauté till all the water dries up. Add one cup of water and pressure cook till the meat is tender.
  4. Add tamarind water, okra and a cup of water and bring it to boil. Cook covered on low heat till the okra is cooked. Sprinkle garam masala powder and coriander leaves. Serve hot.
