Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Bharwan Til Aloo - SK Khazana Recipe

  • Medium potatoes peeled, cored and parboiled 4

  • White sesame seeds (safed til) 1 cup

  • Cottage cheese (paneer) gratedc 1/2 cup

  • Fresh coriander leaves chopped 1 tablespo for garnish

  • Fresh mint leaves chopped 1 tablespoon

  • Cashewnuts chopped 1 tablespoon

  • Ginger grated 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Dried mango powder (amchur) 1 teaspoon

  • Cumin powder 3/4 teaspoon

  • Salt to taste

  • Oil for shallow frying

Method

Step 1

Mix together cottage cheese, coriander leaves, mint leaves, cashewnuts, ginger, chilli powder, dried mango powder, cumin powder and salt in a bowl.

Step 2

Stuff the potatoes with the prepared mixture and cut into thick slices.

Step 3

Mix together sesame seeds and salt in another bowl.

Step 4

Coat the slices with the sesame mixture.

Step 5

Heat sufficient oil in a non-stick pan. Place the slices in it and shallow-fry, turning sides, till golden brown and crisp.

Step 6

Garnish with coriander leaves and serve immediately.
