Ingredients list for Bharwan Capsicum
- 2 medium Green capsicums
- 1 Big Brinjal
- 1 medium Onion
- 1/2 cup Green peas
- 1 small Carrot
- 4-5 French beans
- 4 Garlic cloves finely chopped
- 2 Green chillies
- 1 teaspoon Cumin seeds
- 1 teaspoon Ghee
- to taste Salt
- 2 teaspoons Oil
Method
- Cut the heads of the capsicums and remove the seeds to make them hollow.
- Roast brinjal on direct flame till charred and mash lightly with fork.
- Heat oil in a non-stick pan. Add cumin and onion and sauté till lightly browned. Add garlic, green chillies, French beans, carrot , green peas and salt. Add mashed brinjal. Add ghee. Mix well. Keep aside.
- Stuff capsicum with the prepared vegetable mixture.
- Heat remaining oil in another non-stick pan, add stuffed capsicum. Cover and cook till soft.
- Serve hot.
