Baked Stuffed Mushrooms with Saffron Mayo Mushrooms stuffed with a spicy cheese mixture, baked and served with saffron flavoured mayonnaise. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 22 Nov 2016 in Recipes Veg New Update Main Ingredients Button mushrooms, Saffron (kesar) Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Baked Stuffed Mushrooms with Saffron Mayo 12-16 large Button mushrooms stems removed a pinch Saffron (kesar) 3 tablespoons Mayonnaise 1 medium Onion finely chopped 1-2 Green chillies finely chopped 6-7 Garlic cloves chopped to taste Salt to taste Crushed black peppercorns ¼ cup Mozzarella cheese grated ½ teaspoon Dried mixed herbs 4 teaspoons Milk Method Preheat oven to180°C. Put onion, green chillies, half the garlic, salt, crushed peppercorns and mozzarella cheese in a bowl and mix well. Add herbs and mix again. Stuff the mushrooms with this mixture and place them on a baking tray. Place the tray in the preheated oven and bake for 10-15 minutes. Take mayonnaise in a bowl. Heat milk in a small bowl in the microwave for 20-25 seconds. Remove from heat and add saffron. Mix well and set aside for 2-3 minutes so that the flavour gets infused. Add remaining garlic, salt, crushed peppercorns to mayonnaise and mix well. Add saffron milk and mix well.
