History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Baingan Canapes Recipe

  • Eggplant cut into small cubes 1 medium

  • Biscuits 16 small

  • Oil 2 tablespoons

  • Onion finely chopped 1 medium

  • Green chilli finely chopped 1

  • Red chilli powder 1/2 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Tomato finely chopped 1 medium

  • Fresh coriander leaves chopped 1 tablespoon

  • Fresh coriander for garnish

Method

Step 1

Heat oil in a non-stick pan, add onion and green chilli and sauté on medium heat till the onion turns a light golden.

Step 2

Add red chilli powder, garam masala powder, turmeric powder and salt. Mix well and add tomatoes. Mix well and cook till soft.

Step 3

Add eggplant and mix well. Cook for five minutes on medium heat, stirring occasionally. Add coriander leaves and mix. Remove from heat.

Step 4

Arrange the biscuits on a serving platter, put a little eggplant mixture on each of them. Garnish with coriander sprigs and serve.
