Badami Tangdi

Ingredients 

  • 4 chicken drumsticks 
  • 8-10 almonds, ground into a paste
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon green chilli paste
  • ½ teaspoon crushed black peppercorns
  • Salt to taste
  • Juice of 1 lemon
  • 5 tablespoons mustard oil
  • 1½ tablespoons gam flour (besan)
  • ¼  teaspoon turmeric powder
  • 1 tablespoon hung yogurt
  • 1 teaspoon garam masala powder
  • ½ teaspoon lemon rind grated
  • ¼  teaspoon white pepper powder

Method

  1. Make light incisions on the chicken drumsticks and place them in a bowl. Add ginger-garlic paste, green chilli paste, crushed black peppercorns, salt, lemon juice and rub onto the chicken drumsticks. Keep aside for 20-25 minutes to marinate.
  2. For the second marinade, heat 2 tablespoons mustard oil in a non-stick pan. Add gram flour and sauté for 3-4 minutes stirring continuously. Transfer into a bowl, add turmeric powder, almond paste, hung yogurt and mix well.
  3. Add garam masala powder, lemon rind, white pepper powder, remaining mustard oil, salt and mix well. Add the marinated chicken pieces and coat them well with the second marinade. Keep aside for 20 minutes.
  4. Grease the basket of the air fryer with a little oil. Place the marinated chicken pieces in it and fit it to fryer. Spread the remaining marinade on the chicken drumsticks and cook at 180° C for 14 minutes.
  5. Transfer onto a serving plate and serve hot.
