Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Atta Besan Laddoo Recipe

  • Whole wheat flour (atta) 1/2 cup

  • Gram flour (besan) 1 cup

  • Ghee 1 cup

  • Semolina (rawa/suji) 1/2 cup

  • Pistachios coarsely crushed 1/4 cup

  • Cashewnuts coarsely crushed 1/4 cup

  • Almonds coarsely crushed 1/4 cup

  • Green cardamom powder 1 teaspoon

  • Nutmeg powder a pinch

  • Powdered sugar 1 1/2 cups


Step 1

Heat ½ cup ghee in a non-stick pan. Add gram flour, mix and roast on medium heat till fragrant and golden. Transfer onto a plate and cool.

Step 2

Heat 2-3 tablespoons ghee in another non-stick pan. Add wheat flour and roast till fragrant and brown. Transfer onto a plate and cool.

Step 3

Similarly, roast semolina with remaining ghee in the same non-stick pan.

Step 4

Combine the roasted flours into a bowl and mix. Add pistachios, cashewnuts, almonds, cardamom powder and nutmeg powder and mix. Add sugar and mix well.

Step 5

Divide the mixture into equal portions and shape them into laddoos.
