Ingredients list for Asian Prawn Curry
- 20 Prawns shelled and deveined
- 2 inches Lemongrass
- 2 tablespoons Oil
- 1/2 teaspoon Mustard seeds
- 15-20 Curry leaves
- 1 medium Onion sliced
- 4-5 Birds eye chillies diagonally sliced
- 1/2 inch piece Ginger chopped
- 1 medium Tomato chopped
- to taste Salt
- 1/4 teaspoon Turmeric powder
- 1 cup Thick Coconut Milk
Method
- Crush the lemon grass stalks and then chop them finely.
- Heat the oil in a non stick pan, add the mustard seeds, curry leaves, onion, bird’s eye chillies and ginger and sauté till fragrant.
- Add the prawns and sauté for two to three minutes. Add the tomato and stir to mix.
- Add the lemon grass, salt, turmeric powder and coconut milk. Cook till the prawns are just done. Serve hot.
