Ingredients
- 3 medium potatoes, peeled and cut into wedges
- 1 medium bunch of fresh spinach, shredded
- 1 medium bunch of fresh fenugreek leaves (methi), leaves separated
- 1 tablespoon oil
- 1/2 teaspoon cumin seeds
- 2-3 green chillies, slit
- 6-8 garlic cloves, crushed
- 1 teaspoon finely chopped ginger
- 1/3 teaspoon asafoetida (hing)
- Salt to taste
- 1/4 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 3 tablespoons peanuts, roasted and crushed
Method
- Heat oil in a non-stick pan. Add cumin seeds, green chillies, garlic and ginger, mix well and sauté fragrant.
- Add asafoetida and mix. Add potatoes and mix well. Add salt, mix, cover and cook till potatoes soften and are lightly browned.
- Add turmeric powder, chilli powder, peanuts, spinach and fenugreek leaves, mix well and cook till the leaves wilt.
- Serve hot.
