Ingredients list for Achari Pulao
- 3 cups Basmati rice , cooked
- 3 tablespoons Green chilli pickle (mirchi ka achar)
- 1 tablespoon Oil
- 1 teaspoon Mustard seeds
- 1 Dried red chilli
- 1 medium Onion , finely chopped
- 1/2 cup Mixed capsicums (red, yellow & green) triangles
- 1/2 cup Corn kernels , boiled
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 1/2 tablespoon Lemon juice
- 2 teaspoons Fresh coriander leaves , chopped
- for garnishing Fresh coriander sprigs
Method
- Put green chilli pickle into a mixer jar and grind to a smooth paste.
- Heat oil in a non-stick pan, add mustard seeds and let them splutter. Break red chilli and onion, mix and sauté till onion turns translucent.
- Add mixed capsicums and corn kernels, mix and saute for 1 minute. Add green chilli pickle paste and turmeric powder, mix and saute for 1 minute.
- Add rice, toss well and cook for 1-2 minutes. Add salt, toss and cook for 1 minute. Add lemon juice and mix. Add coriander leaves and mix well.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot.
