Ingredients list for Zafrani Meetha Chawal

  • 1 1/2 cups Basmati rice
  • a pinch Saffron
  • 4 tablespoons Ghee
  • 12 Cashewnuts
  • 25-30 Raisins
  • 1/4 teaspoon Nutmeg powder
  • 20 Almonds slivered
  • 1/2 teaspoon Green cardamom powder
  • 1/2 cup Sugar

  1. Soak rice in just enough water to cover it for an hour. Drain.
  2. Heat ghee in a deep pan and gently sauté cashewnuts and raisins. Add grated nutmeg, rice and sauté gently for two to three minutes.
  3. Add slivered almonds and mix. Add two and one fourth cups of water and bring it to a boil.
  4. Add saffron, cardamom powder and mix. Add sugar and mix.
  5. Cover and cook over low heat for ten minutes.
  6. Serve hot.
